Burrata, Tomatoes & White Beans

Ingredients
Good burrata
Butter beans (jar or tin)
Mixed baby tomatoes (cherry, plums, heritage)
Basil
Rocket
Lemon
Olive oil
Black pepper

Method
Drain the beans, toss with tomatoes, rocket, lemon and olive oil. Tear the burrata over the top and finish with basil. Eat with crusty fresh bread.

A very “Ottolenghi without the effort” sort of lunch. Packed with protein despite looking indulgent.
