Salmon, Lentils & Herb Yoghurt Bowl

Ingredients
Hot smoked salmon (or smoked trout)
Ready-cooked Puy lentils
Baby spinach
Cucumber
Cherry tomatoes
Fresh dill and parsley
Greek yoghurt
Lemon
Extra virgin olive oil

Method
Mix the lentils with the spinach, cucumber and tomatoes. Gently warm the salmon, flake it over the salad, then top with a spoonful of Greek yoghurt, fresh dill and a little lemon zest. Finish with a drizzle of extra virgin olive oil and black pepper, if desired.

Super quick and easy, it literally takes 10 minutes to put together.
I love the contrast of the warmed salmon with the cold salad, but if you are short in time, it’s just as delicious with the salmon served cold.
