Scones

These light and fluffy scones are perfect for a traditional British afternoon tea or a cosy weekend treat. Easy to make and wonderfully versatile, they’re ideal with jam, cream, or your favourite topping!

Calories: ~120kcal/ portion – Makes 18 scones

Ingredients

450g plain flour, plus extra for dusting
1/2tsp salt
2tsp baking powder
60g of cold butter
2tbsp caster sugar
250ml milk, plus extra for brushing

6cm ring cutter

Strawberry jam and clotted cream to serve

Instructions

Preheat the oven to 220c/ Gas mark 7

Sift the flour, salt and baking powder into a large bowl. Rub in the butter with your fingertips until the mixture resembles a crumble, then stir in the sugar. Make a well in the centre and pour in the milk. Mix gently with a wooden spoon until it just comes together into a soft dough

Turn the mixture into a floured surface and lighlty flatten the dough until is of even thickness, about 2.5cm/ 1 inch. Avoid overworking the dough, scones need a light touch ❤

Cut the scones using a 6cm ring cutter and place on a baking tray

Brush with a little milk and bake for 10-15 mins or until the top is golden.

Cool and serve with jam and clotted cream
